Savagnin
Deli
Savagnin is a white grape with deep roots in France’s Jura region, where it has been cultivated since at least the Middle Ages. Known for its late ripening and moderate vigor, Savagnin thrives in the Jura’s cool climate, producing small to medium clusters of golden-yellow berries. While Jura remains its heartland, plantings have spread to Australia—particularly the Adelaide Hills and Tasmania—and some parts of California. The grape is sometimes referred to as Traminer in other regions.
The wines from Savagnin are distinctive and aromatic, often showing notes of nuts, citrus, and exotic spices. A compound called sotolon contributes to the characteristic nutty and curry-like aromas. They maintain bright acidity, giving freshness and balance, and exhibit remarkable aging potential. In Jura, Savagnin is the cornerstone of Vin Jaune, an oxidative wine aged for many years in small barrels, though it can also produce crisp, lively whites depending on winemaking style.
Savagnin’s versatility allows for both oxidative and non-oxidative styles, making it capable of delivering wines that are crisp and fresh or rich and complex. Its unique aromatic profile, longevity, and connection to Jura terroir make it a fascinating choice for those seeking white wines with personality and depth.
