Saperavi

Saperavi (საფერავი) is an ancient red grape variety from Georgia, primarily associated with the Kakheti region in the Alazani River Valley. Its name comes from the Georgian word “sape,” meaning “dye” or “color,” reflecting the grape’s deep, almost inky red hue. Saperavi has been cultivated for centuries, making it a cornerstone of Georgia’s rich winemaking heritage.

The vines are adaptable to both cool and warm climates, thriving in diverse soils. Grapes are small to medium-sized, with thick skins that contribute to the wine’s intense color and tannin structure. Saperavi wines are full-bodied, featuring flavors of dark fruits like blackberry, plum, and cherry, with firm tannins and balanced acidity that provide both structure and aging potential. High-quality Saperavi can age for decades, developing complex aromas and flavors over time.

Wines from Saperavi are deeply colored, ranging from dark ruby to purplish-black, with aromas of dark fruit, spices, and occasional floral notes. The palate combines rich fruit, acidity, and tannic backbone, making it ideal for pairing with grilled meats, stews, and game. Today, Saperavi is cultivated beyond Georgia, including Russia, Ukraine, Moldova, and regions of the United States such as the Finger Lakes, highlighting its versatility and global appeal.
