White Wine IAQUIN Rebula – Goriška Brda, Slovenia
Style & Winemaking:
Short maceration 2-3 hours in contact with skins and seeds in a stainless steel container. Gentle compression with a pneumatic press. The wine is fermented with the grape yeast. Maturing in 225L French oak barrels (barrique) for 10-12 months.
Tasting Notes:
Appearance: Medium golden-yellow hue, with a slight amber reflection, indicating some oxidative development from time in oak.
Nose: Elegant and expressive. Aromas of ripe yellow apple, pear, quince, and dried apricot, woven with honeyed undertones, vanilla, and a light toasted almond or hazelnut note from the oak. Secondary aromas includes a flinty minerality, reflecting Goriška Brda’s marl and flysch soils.
Palate: Dry, with a medium to full body and a smooth, rounded texture. Medium-plus acidity and very light tannins. The oak aging lends a creamy mouthfeel and gentle spice notes (vanilla, clove, a touch of smoke), while the natural acidity of Rebula keeps the wine fresh and balanced. Flavors mirror the nose, with stone fruits and subtle citrus leading into a long, mineral-driven finish.
Pairing Suggestions:
* Roasted chicken with herbs
* Grilled white fish or seafood pasta
* Aged cheese (e.g., Tolminc, Brie, Comté)
* Mushroom risotto
* Polenta with truffle or wild game sauces
Serving temperature: 12 °C.
