White Wine Rebula Sveti Martin – Vipava, Slovenia

Vinification: Hand-harvested in September. Five hours of maceration, then fermentation on fine lees in stainless steel containers, and 4 months of maturation in an oak barrel. 

Characteristics: Medium intense golden yellow color, elegant bouquet, with both herbal and fruity notes. Lively acids, medium-bodied, a bit oily. Gentle, harmonious taste and short, calm, and pleasant finish.   

Food pairings: Semi-hard cheeses, fried or grilled poultry, grilled salmon, or sardines.  Serving temperature: 10 – 12° C.
