Extra Virgin Olive Oil KYKLOPAS Early Harvest - Alexandroupolis, Greece

This single-variety extra virgin olive oil is produced exclusively from the Makri olive, harvested in mid-October and milled within 4–8 hours of picking. Acidity is exceptionally low. The cultivar expresses distinctive characteristics shaped by the local microclimate and the estate’s soil composition.

Aromatic intensity is medium to high, with clear green notes of fresh olive, green banana, artichoke, and cut grass. The profile is clean and well defined, with no ripe or oxidative aromas. Extraction is carried out under strictly controlled cold-press conditions to preserve volatile compounds and phenolic balance.

On the palate, the oil is layered but restrained. Fruitiness leads, followed by moderate bitterness and a measured, lingering pungency. The structure is balanced rather than aggressive, with good length and a clean finish. Complexity comes from precision and clarity rather than force.

This oil is best used as a finishing element, where its aromatics and balance remain intact. It pairs easily with vegetables, fish, grains, legumes, and fresh cheeses, and works particularly well in dishes that benefit from freshness rather than intensity.
