Red Wine Constantini Muse Cabernet Franc – Goriška Brda, Slovenia. 

Vinification: Hand harvested selected grapes at full ripeness in early October. Maceration: 14 days on the skins in stainless steel tanks. The wine is fermented with the grapes own yeast. Fermentation is completed in wooden vats. Natural maturing in Slavonian oak barrels for 4 years. Maturing continues after bottling. 

Description: Intense ruby color. With longer maturing, it takes on dark red hues. Balsamic notes of ripe fruit, violets, cherries, all elegantly enriched with soft spiciness. It is dry and soft in the mouth at the same time, enveloping and perfectly balanced thanks to the harmony between acids and tannins. The wine is complex, full-bodied, and pleasantly fresh. Over the years of maturing, the structure gains elegance and finesse of flavor, while keeping its freshenss, fruitiness, and harmony of taste. 

Food pairing: game carpaccio, Florentine steak, grilled venison tenderloin, wild boar cutlet, mature piquant cheeses. Serving temperature: 18-20 °C.
