Red Wine Constantini Muse Ruby – Goriška Brda, Slovenia. 

Vinification: Hand harvested selected grapes at full ripeness in October. Maceration: 18 days on the skins in stainless steel tanks. The wine is fermented with the grapes own yeast. Fermentation is completed in wooden vats. Naturally dried, selected grapes are fermented in wooden vats and matured separately in Slavonian oak barrels for 4 years, then the wines are blended to combine couvee Muse Ruby. Maturing continues after bottling. 

Tasting notes: Intense ruby color, with longer maturing, it takes on dark red hues. Complex aroma with strong notes of ripe red fruit, dark dried fruits. Full-bodied, fully ripe wine with well balanced softness and minerality. The finish is almost balsamic with obvious notes of eucalyptus and licorice. Over the years of maturing, the structure gains elegance and finesse of flavor, while keeping its freshness, fruitiness, and harmony of taste. Long and fresh aftertaste. 

Food pairing: Florentine steak, game with juniper sauce, mature cheeses. Serving temperature: 18-20 °C.
