White Wine Rebula Sveti Martin – Vipava Valley, Slovenia
Vinification: Maceration takes place for 2-4 days in contact with the skins in a stainless steel container. Gentle compression with a pneumatic press. Maturation 4 months in oak barrels.
Characteristics: Medium amber color. The bouquet is ripe, with hints of wood, resin and apple peel. In the mouth, the wine is very dry, mineral, with high acidity and pleasant light tannins. Short but very distinct aftertaste.
Food pairings: Pairs well with semi-hard cheeses, fried or grilled poultry, grilled salmon, sardines or other fatty fish. To serve at 12 – 14° C.
