Red Wine Merlot Sveti Martin – Vipava, Slovenia
Vinification: Maceration takes place for 20 days in contact with the skins in a stainless steel container. Gentle compression with a pneumatic press. Maturation 12 months in oak barrels. Unfiltered. Ageing potential: 2022 – 2027.
Characteristics: Deep red colour with light violet shades. Plum, oak and cherry flavour. Light but peppery spices in the mouth. Fruity, with soft tannins. Long aftertaste with mellow deep and velvety finish.
Food pairings: Pairs well with beef, particularly grilled or roast beef or filet mignon. Also good with lamb or grilled chicken, mushrooms and blue cheeses. To serve at 14 – 16° C.
