Organic Orange Wine Elepard – Slovenia, Istra, Korenika & Moškon
Vinification: 25 days on skins (maceration), without pressing. Fermentation: inox (stainless still), indigenous yeasts. Malolactic fermentation with indigenous bacteria. Maturation: 10 years in oak barrels. The wine is unfiltered. Ageing potential: 2020 – 2035
Characteristics: The wine is a deeper amber color. The flower is ripe, intense. It smells of dried figs and raisins, and oxidative notes are also detectable, which take us a bit into the world of sherries. A dry wine with high acidity, with an oily texture. The aftertaste of dried figs and caramel takes us back to the world of amontillado sherry. A very unique, special, niche wine.
Food pairings:
Pairs well with steak or any other strong-taste dishes and aged cheeses. To serve at 12 – 14 °C.
