Red Wine Chateau Maucaillou Haut Medoc – Bordeaux, France
Vinification: Maceration takes place for 28 days in contact with the skins in a stainless steel container. Fermentation with gentle punching-down for selective extraction of the tannins. Malolactic fermentation is carried out in barrels which are 30% new wood.
Maturation 2 years in oak barrels and additional 6 months in the bottles. Ageing potential: 2020 – 2026.
Characteristics: Intense ruby red color with garnet shade. Fruity flavour with cassis and blackberry, followed by light vanilla fragrance. The wine is full-bodied, marked by a hint of oak and hints of sweet spices. After a few years of ageing, the tannins soften.
Food pairings: Lamb, red meats, roast guinea fowl, maturated mountain cheeses. Serving temperature: 16 – 18°C.
