AEGAEA… Its name means “emerging from the Aegean,” a tribute to the origins of the producer, the Protoulis family.

AEGAEA is an early-harvest olive oil. Kolovi (Valanolia) olives used for its production are harvested and selected by hand in October when they just start to ripen. Kolovi are small, round green olives with an oil content of about 20% by weight. This variety was chosen exclusively for AEGAEA olive oil to highlight its dynamic qualities and potential.

The Kolovi olive tree does not need much water. It grows on the mountain terrains of the island of Lesvos, developing a deep and wide root system that absorbs unique soil features, storing them in the fruit. This is why the oils made from these olives have sophisticated, intensely fruity, and grassy aromas.

Like any other early-harvest olive oil, AEGAEA has low acidity and high antioxidant value. The most distinctive features of this olive oil are its golden-green color, strong and versatile fruity taste, grassy aroma, rich texture, full body, and slightly peppery finish.

AEGAEA is a fairly versatile olive oil suitable for a wide variety of dishes, but it pairs especially well with grilled fish or vegetables. Taste and enjoy!
