Olive Oil Producers: The Sopotnik Family

In the region of Istria on the Slovenian Adriatic coast, there is an olive farm of the Sopotnik family.
A small olive grove is warmed by the sun from the southwest, and from the northeast it is protected by the Liminjan hill from the cold winds of Bora. 

This farm grows olives and produces Sopotnik organic olive oil. For them, organic is not only a cultivation method in order to receive a beautiful certificate. The family believes that their farm activity must be useful both for our health and for the earth, which gives us its treasures. 
The commitment to this idea is the foundation of the success of the family, year after year creating their excellent organic extra virgin olive oil. 

Slovenian Istria is an exceptional area – terroir where unique olive oil is produced. Geographically, this is the northernmost place in the world where the olive tree grows.
Every year in mid-October, the Sopotnik family harvests indigenous Slovenian olives Belica, Buga, Črnica, as well as varieties that came from neighbouring Italy: Leccino, Frantoio and Pendolino. 

Most of the olive grove is made up of Istrian Belica olives, which give Sopotnik olive oil its characteristic fresh, bitter-spicy flavour and fiery peppery finish.
The olives are hand-picked and pressed the same day to keep the olive oil fresh, flavoured and all the benefits nature provides.
