White Wine Cultus Zelen - Vipava Valley, Slovenia

Vinification: Maceration takes place for 3 days in contact with the skins in a stainless steel container. Gentle compression with a pneumatic press. Maturation 12 months in oak barrels and stainless steel tanks. Throughout the whole year no sulfites was added. The wine is unfiltered and a minimum amount of sulfites was added just before bottling.
Characteristics: Zelen is an autochthonous local grape from the upper Vipava Valley. The main feature of this wine is the subtlety of herbal flavours like rosemary and lavender with a hint of fruity aroma. The wine has an enjoyable freshness reminiscent of dry white flowers. Combined with a wonderful versatility and sustainability in the taste he invites us to discover his complexity over and over again.
Food pairings: The wine goes well with white meat or fish, with soft cheeses or ripe summer fruits. To serve chilled at 10-12° C.
